Weekly Recipe #328: Orange Ricotta Waffles

Surprise your mom this Mother’s Day with Chef Seth’s delicious Orange Ricotta Waffles!

Ingredients 

  • 3 cups flour
  • 1 tbsp. baking powder
  • 1 tsp. baking soda
  • Zest of two oranges
  • 5 eggs, beaten
  • 1 tbsp. vanilla extract
  • 2 cups ricotta cheese
  • 1 1/2 cups milk
  • 1/2 pound butter, melted

Directions

  1. Combine flour, baking powder, baking soda and orange zest in a bowl.
  2. Combine beaten eggs, vanilla extract, ricotta cheese and milk in a separate bowl.
  3. Combine wet ingredients with dry and mix until smooth, then add melted butter.

This batter can be used for waffles or pancakes, and Chef Seth recommends topping with real maple syrup.
