Chef Kari’s Pumpkin Bars

Ingredients – Bars:

  • 2 cups flour
  • 1 3/4 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 4 large eggs
  • 1 cup vegetable oil
  • 1 1/2 cups sugar
  • One 15 oz. can pumpkin puree

Ingredients – Icing:

  • 6 oz. cream cheese
  • 3 oz. butter
  • 1 3/4 cup powdered sugar
  • 3/4 tsp. vanilla extract

Directions – Bars:

  1. Preheat over to 350 degrees.
  2. Mix together flour, baking powder, baking soda, cinnamon and salt and set aside.
  3. In a mixing bowl, beat eggs with oil and sugar.
  4. Add pumpkin puree and mix just until incorporated.
  5. Add in dry ingredients and mix until smooth.
  6. Grease a 8 x 10 baking pan and add batter. Bake 20-25 minutes.

Directions – Icing:

  1. Beat the room temperature butter and cream cheese together.
  2. Add in powdered sugar and vanilla and mix to smooth.
  3. Let bars cool to room temperature then top with icing.
  4. Refrigerate for at least 1 hour, then cut into desired servings.
