Nourishing our clients with fresh, organic veggies


Our 2-acre organic garden, Open Farms, is located in Belle Plaine, Minnesota. During the summer months, the garden allows us to grow a healthy portion of the vegetables we use in our kitchen. In a healthy harvest, that can amount to some 15,000 pounds of vegetables -- essentially, the 24 different vegetables most used in the nutritious meals we cook for our clients.

On the farm, we use natural, ecological processes for fertilization and pest control rather than synthetic chemicals. This helps us fulfill our commitment to include as much organic, fresh food in our clients' meals as possible. It also creates an amazing opportunity for our farm volunteers to learn about locally and sustainably produced agriculture -- up close and in the dirt!

Our Open Farms fields sit on land that was once part of a 200-acre family farms. Today, much of that land is used by the Prairie Oaks Institute, a retreat center that focuses on ecological sustainability and rejuvenation, education and leadership development, and retreat and renewal.
